I had a rough night. I woke up twice in the night to eat cereal. I was starving. Cereal may not have been the best choice, but I was half asleep, not gonna cook, and needed something fast. I will probably try to prepare alternatives for future nights like this.
I made some egg muffins today. I took the idea I saw on pinterest and made it my own. Here is the recipe.
Cook 8 slices of bacon, chop and put in the bottom of the muffin pan. Add chopped tomatoes, if you wish
Wisk 12 fresh farm eggs with 2 tsp of tabasco, chopped fresh spinach, a touch of oregano, salt, and pepper
Add shredded cheese of choice to egg mixture and pour on top of the bacon in the muffin pan.
Cook at 375 for 30 minutes. Let cool before trying to get them out of the pan.
- 2 egg muffins
- 2 sausage links
- 2 cups of coffee with sweet cream
- tortilla chips & salsa
- Grilled peanut butter sandwich on sugar free bread. (I fried the sandwich just like I would if it were a grilled cheese)
- Salad- romaine, cucumber, tomato, cheddar cheese, rotisserie chicken, fresh herbs, and light ceasar vinegarette (less than 3 carbs)
- Leftover onion straws
- Healthy Peanut Butter cookies- 1 cup natural pb, 1 cup coconut palm sugar, 1 egg, 1 tsp vanilla. Bake at 350 for 10 minutes.
