My Gestational Diabetes Diet

I had a couple of hard days.  On Tuesday I found out I had some skin cancer, but didn’t know how extensive or how dangerous it was.  Yesterday, I went to the doctor for a full body scan and found out that I would have to have a very minor surgical procedure to remove my cancer from the leg, but I didn’t have it anywhere else and everything would be just fine and not even that big of a deal.  Relief.

That being said, I’m an emotional eater, so I cheated yesterday…

 

Breakfast:

peanut butter and honey with dark chocolate

coffee and creamer

 

Lunch:

hummus and rice chips

3 Chicken tenders

small coke

 

Dinner:

Sausage and cabbage

Mashed sweet potatoes

Chicken salad

 

Snack:

too much icecream and chocolate ganauche

Breakfast:

Coffee and Creamer

1/2 cup oatmeal, coconut milk, and blueberries

 

Snack:

Spaghetti Squash Casserole

 

Lunch:

Salmon

Salad with Oriental Dressing, peanuts, cucumbers, red pepper, black bean, and tomatoes

 

Snack:

Small Salted Caramel Latte

 

Dinner:

Tortilla chips and Spinach and Artichoke dip

Snack:

Dark Chocolate and Peanut Butter

My mother in law loves healthy eating as much as I do and I love exchanging ideas with her.  She’s been gluten free for quite a while now and that woman walks a lot.  She’s healthier and in better shape in her 60’s than I am.

One thing I realized when talking to her is that I need to shrink my stomach.  I have gotten so used to eating a lot of calories, that I think I’m starving if I try to cut back.  So, I think that my next step to weight loss needs to be calorie counting.

Bree- Remember that there are websites that have meal ideas for 200,300,400 calories.  It’s so helpful.

I haven’t written in two days, but I have stayed on task and remained gluten free, except for Valentine’s Day.  I had a tiny piece of cheesecake and it was not gluten free, but it was VALENTINE’S DAY!

I have decided that I need to shrink my stomach, cause I eat healthy, but I just eat too much.  I’m always hungry.  I think I’m gonna try a veggie diet or a liquids diet for a few days at some point to cut back on my need to massive amounts of food.

Breakfast:

Coffee and Creamer

 

Snack:

2 pieces of Paleo bread with molasses

 

Lunch:

5 pieces of sushi

 

Snack:

2 carrot/zucchini muffins

Coffee and Creamer

 

Dinner:

GF pasta and parm chicken

Salad with apple cidar vinegar dressing

 

Snack:

a bite of GF carrot cake

1 GF choc chip cookie

Carrot/zucchini muffin

Tea

Peanut Butter, honey, oatmeal, dark chocolate, protein

 

Lunch:

Tortilla chips and babaganoush

 

Snack:

Dark Chocolate and Hazelnuts

 

Dinner:

Cuban Hash, Romaine

Sweet Potato fries

 

Snack:

2 Veggie burgers

Banana, oatmeal, chocolate cookie

My next food goal needs to be taking in less calories.  I lost an immediate 5 pounds doing gluten free, but I gained 2 back because I was going overboard with the chocolate covered nuts.  oops.

Breakfast:

Fight the cold smoothie- berries, pineapple, coconut milk, greek yogurt, green juice, protein powder, omega 3 oil, vitamin D, probiotics

Coffee and Creamer

Snack:

I made Cuban Hash and it is cooking in the crockpot, but I had to have some now.  I’ve had about 2 cups of it.  beef, spaghetti sauce, olives, onions, garlic, dates, and spices.

Lunch:

Lots of Chocolate

Snack:

too much chocolate

Dinner:

Philly Cheesesteak stuffed peppers

potatoes

Snack:

more chocolate (God help me.  I ate 2 days of calories in dark chocolate today!)

Crockpot ham cookes in pineapple and brown sugar

Smashed potatoes

Roasted cauliflower

Snack:

I accidently had a whole chocolate bar from EarthFare.  A scary 450 calories

Dinner:

Thai Chicken salad with rice noodles
